About Us

Fat Rosie’s is a vibrant taco and tequila bar inspired by a chance encounter in Mexico between the restaurant’s Chicago-born founder, an agave farmer, and his loyal donkey. Moved by the story of the hardworking animal that had been part of the farmer’s family for more than 20 years, the founder envisioned a restaurant that would honor that spirit of authenticity, loyalty, and celebration. Since opening in 2015, Fat Rosie’s has brought Chicagoland a bold and festive dining experience featuring scratch-made Mexican favorites, creative margaritas, and an energetic atmosphere that feels like a nonstop fiesta!
